Dating as far back as the 19th century to an area near Lake Albufera in Valencia, paella is one of the Spanish town's most famous contributions to tables around the world. Primarily made up of seafood, it can also include snails, beans and other meats and veg.

The national dish from the land of the pharaohs is ful madammas, a dish made up of mashed fava beans and served with olive oil, chopped parsley, onion, garlic and lemon juice. If you're in this neck of the woods, don't mist the oven baked bread and hummus either

Quesadillas, tortillas, enchiladas, tostados and tortas have all become household words across most parts of the globe but originate here in the South American city. Also a must try is the mole Poblano, a sauce made up of 20 different ingredients

Balti curries are immensely popular in the Kashmiri cuisine, especially the ones using mutton. Other culinary highlights here are the matzgand (cooked lamb meat balls), yakhein (yoghurt based meat dish), kofta (mutton sausages) and rogan josh (spicy lamb curry)
